View Full Version : I need help cooking breakfast...

for 14-16 people around 8:00 A.M. the day after Thanksgiving! HELP!
Let me see if I can describe this situation. Thanksgiving Day my whole family (including at least 5 out-of-towners) will have lunch at my sister's house. The five coming from out of town are family members I have not seen in at least 10 years so this is kinda' special. They will be staying at a nearby hotel because my brother, sister and I will have immediate family staying with us.
Thanksgiving Day there'll be probably 20 of us but some have to work on Friday so I don't know whether to expect them Friday morning or not. The folks from out of town need to leave early Friday...but they all want to come to my house for breakfast before hitting the road. Someone suggested coffee and donuts but I'd like to do something a lot nicer than that. Only problem - I have NEVER had a houseful of company for breakfast! I can't think what to serve or how to serve it...not to mention my own family will be trying to get up, get showers, get dressed, etc. The prospect of this much chaos is a bit overwhelming!! It doesn't help that my galley-style kitchen is the size of a walk-in closet! :jumping0047:

Does anyone have any tried and true fix ahead breakfast recipes??? I've had something like a sausage/egg/cheese (?) casserole at brunches but I don't have any recipes like that.
I can set the table anytime, I can have coffee and juices, etc., but I can't picture where to go from there...unless it is to the donut shop!!:ashamed0003:

Wow, what a lot of activity! My thought was a sausage, egg, and cheese casserole. I have had it at gatherings but do not have a recipe for it. I am sure someone will come up will some solutions for you. Sounds like fun!

I was also thinking breakfast casserole. I'll see if I have a recipe...
And for the non-egg, non-meat people, donuts are not a bad idea. Or Betty Crocker Blueberry Muffins are the best you can get in a box mix...they are very good. They could be put in the oven before the casserole, since they don't technically have to be hot to be enjoyed.

I've got a wonderful French toast casserole recipe that needs to be made at least a day ahead of time...when I get home I'll dig it up for you.

I love French toast! Sometimes I make it with eggnog mix. Last year around this same time my husband and I took our pug to Texas to see an animal eye specialist. We stayed in a beautiful pet friendly hotel that offered free breakfast.
Rather than leave our dog unattended in our room, I went to the dining room to get our breakfast planning to bring it back to the room. That's when I discovered they had a Belgium waffle maker! My husband loves Belgium waffles - I knew he'd be thrilled!
I got a tray just for him, gathered-up coffee and juice, then proceeded to make his fresh waffles. Hot off the machine I added butter and then syrup from a machine designed to serve syrup heated - then I hurried back to deliver this special breakfast.
I then made a return trip to the dining room to fix my own waffles and returned to our room with them. About the same time I sat down to eat, I realized I had syrup ALL OVER ME! We were only staying one night and I'd only brought one pair of jeans AND THEY WERE COVERED WITH SYRUP. My arms were covered with syrup. My shoes were sticking to the floor.
Instead of enjoying my breakfast, I had to hurridly try to clean-up all the syrup I could find and wash my jeans and dry them with a hair dryer.
How on earth I managed to get so much syrup on myself is still a mystery. I never even picked up the syrup container - it was mounted to the heating device.

If I had to do that, I would go for the bagel, lox, whitefish, cream cheese, fruitplate buffet type thing, throw in some pastrami and corn beef and a huge pan of scrambed eggs.
Your guests can help arrange things on platters while you scramble the eggs.
Danish; don't forget the Danish or donuts. Ha, ha!!

This morning I was supposed to drive Mother to an early doctor's appointment 25 miles from home and I overslept. I jumped out of bed, showered, put on makeup, etc., and took off - no time for breakfast.
Her appointment was at 9:00 A.M. - we waited 90 minutes before seeing the doctor, then he spent at least an hour with her. I was getting Excedrin Headache #1 from hunger and mega-stress!
When we got out I decided to drive a few more miles to checkout a little neighborhood bakery I'd heard about. I wanted to see what their homemade Danish was like BUT they were almost sold out of everything and were closing for the day. They're only open half days.
They had 2-3 homemade eclairs so I bought one and woofed it down in my car, in the parking lot. I was like a starved animal! I inhaled the wondrously delicious thing! If I'd had two, I would have inhaled a second one but, blessedly, I'd only bought one.
Driving home I started feeling so "urpy" I thought I was going to die! Then the phone was ringing when I walked in and I had to listen to a cousin go on and on and on and on about a dog she'd found. Again, blessedly, she finally had another call - at which time I put my nightgown back on and went back to bed!

Andros, do you know I have never in my entire life tasted lox or whitefish and I've never eaten pastrami or corn beef with scrambed eggs. :ashamed0003:
As everything has begun to fall in place, I'll feed everyone Wednesday night and Friday morning. We'll all gather at my sister's house on Thanksgiving Day.
I'm hoping ye' olde' Synthroid gets me through all this but for some R-E-A-L-L-Y strange reason, I don't feel just too terribly stressed about any of it. I'm always more at ease entertaining after dark - dust and windows that need washing aren't as obvious!
Wednesday night I'm going to have my own world famous chicken salad on crossants with fresh fruit AND a cake to die for! I modified an old "Black Forest Cake" recipe years ago that has four baked meringe layers, each iced with chocolate and crushed hazelnuts and then the whole thing is slathered in real whipped cream. People always go crazy over the cake but it's actually an easy, fun project.
Friday morning I've decided to have a variety of foods - mostly things I can prepare the night before or people can fix themselves - like Belgium waffles! Another food item I invented myself is something we call "Egg A'Muffins" - my version of McDonald's Egg McMuffins.
I've got several side dishes to make and take to my sister's on Thursday but nothing elaborate.
Next week is going to be solely devoted to grocery shopping and cooking!

Another good one is a veggie/egg bake.
You do it in a cake pan. It's kind of like a cake sized omelet with veggies and meat topped with cheese.
Yum.
I don't have the recipe handy, but google would have plenty!

I love ethnic foods and having lived in New York for quite a few years, it is hard to not be adventuresome. Anyway, don't count on me for ideas. Ha, ha!!

What you decided to prepare for your guests makes me wish I was one of them. It all sounds wonderfully yummy...........................; including the woofed down eclair!! LOL!!

Nooooo...friends don't let friends eat those eclairs! :winking0001: I went back to that donut shop Thursday for something else and I left the eclairs alone!
It feels good to kinda' feel good - to have a little enthusiasm for Thanksgiving. I feel like I'm always the wet blanket, always the one who just doesn't feel well. Believe it or not, I've been thinking about dragging out our 5,000 miles of old outdoor Christmas lights.
Y'all better hope all my new-found energy holds out because if I crash, I'm going to be more upset than ever!!!

You could get microwaveable pancakes and the like. Those are very quick to make! You could set things out like a buffet. Maybe breakfast burritos? Have tortilla wraps, scrambled eggs and different other assorted fillings (crumbled bacon, cheese,etc)

I have bought at least $350 worth of groceries this week to cover supper on Wednesday night, the things I'm taking to my sister's house on Thursday, and breakfast on Friday and an hour ago I got word that four of the ones coming from out-of-town are not coming, including my son-in-law who has to work on Friday. Oh, and Mother announced today that she isn't feeling well and doesn't want to go anywhere nor eat anything. :party0009:
I have bought and organized ingredients for everything special I know how to cook and then some. We have groceries stashed everywhere we can get them out of sight. We've washed seldom used dishes and polished silver...now we're almost back to our immediate family.
Diet? Gheez! I've got enough food here to feed us until Christmas and virtually none of it is anything anybody should eat on a daily basis except a pile of fresh fruit and probably $20 worth of nuts!! :anim_63:

Did you get the one I sent? I stuck in the little slide-out tray in the bottom of my computer and clicked "Send". :ashamed0003: I couldn't figure out how to send you and syrup!
I just thought I'd tell everyone I may get arrested this afternoon. I'm fixin' to take a long soaking bath in Calgon hoping the overwhelming urge to kill my cousin passes...otherwise I hope prison food agrees with me. We just got another late update - now they're back to the plan of coming and will be here around 1:00 P.M. instead of 6:00-7:00 P.M. It's 11:00 A.M. and I'm still in my pajamas although I have been cooking stuff for tomorrow since 6:00 this morning!
I fault my mama for a lot of things but at least she raised us to commit to something and follow through to the best of your ability.
When I heard no one was coming, I decided why waste all the food, etc., I bought for tonight? I'd just save it until maybe a Christmas party or something else so I didn't cook anything last night. Now, everyone thinks they're having supper here, to which my cousin said, "Don't go to any trouble for us, we'll just eat whatever y'all are eating." O.K., they can eat Greek yogurt and maybe some leftover cabbage I need to get out of the refrigerator. They could have had leftover meatloaf sandwiches but unfortunately MY HUSBAND DROPPED HALF A MEATLOAF ON THE KITCHEN FLOOR! Yes!
Mother just called to complain that my brother-in-law forgot to change their dog's water bowl this morning and my brother called from Georgia to say his mother-in-law may have a stomach virus. He'll be home Sunday!
Calgon, take me away! As far as possible!
